What do you want to learn? There are amazing instructional videos on youtube, let alone what Al has written on this site.
Read the instruction book, then try, fail, repeat.. Experience is the best teacher. When you have specific problems then you can solve them individually.

I guess it depends on the country you live in... I would suggest to contact the companies that produce the material you are using. In addition to what JMN already posted, I would add the download link for the manuals. Ivoclar, and others, too, have very detailed instruction manuals:

http://www.ivoclarvivadent.com/en/download-center/instructions-for-use-for-dental-technicians/#I

You will find e.max under the letter 'I' for IPS (Ivoclar porcelain system)

There are multiple documents that they have produced that will help if you are using their IPS Emax ceram

For the substructure:

JMN, ps2thtec, and M,

All great answers! The manuals are great ways to know how to handle the materials and the concepts behind material choices (translucency levels of substructures, etc). They just don't really teach where to use what shades for a desired effect, that is a little more controversial as they can be achieved in different ways.

I really like the Oliver Brix books, as well as the Ubassy books. These will give you ideas on how to choose colors and powders for different effects. But, they will only get you so far. You have to sit down and practice mixing different powders and colors to see the effect they can and will achieve. Even a course will not do this for you, they are only going to give you ideas for achieving what you want, you must still practice, practice, practice.
